
Limestone Branch Distillery has released Yellowstone Recollection Collection Bourbon. The first bottle in the series is an 8 year, 110 proof Kentucky Straight Bourbon Whiskey.
Limestone Branch Founder Stephen Beam is the 7th generation of the Beam family in Kentucky distilling on his father’s side. He comes from Joseph Beam’s line. Joseph had a distillery in Manton, Kentucky in Washington, Kentucky that was sold on the courthouse steps after his death. His sons were Minor Case and Joe L. Beam, both of whom worked in the distilling industry.
Beams mother was a Dant, another well-established Kentucky distilling family.
Beam says that one of his goals when he started his distilling story was to bring the Yellowstone brand back into his family.
In 2010 he started Limestone Branch Distillery with his brother and in 2015 he partnered with Luxco, bringing the Yellowstone brand back into his business. Yellowstone is one of the few brands that has been around before, during, and after Prohibition.
This new release is in a replica “back bar bottle,” modeled after a historic Yellowstone bottle Beam found on eBay. Originally, these bottles would be refileed from barrels before bottling Bourbon became economical. The label features a waterfall at Yellowstone National Park and the Yellowstone logo is raised and embossed on the front of the bottle. It has to be hand bottled because of the embossing in order to get all the labels in the correct positions. Beam says this is not intened to be a high production release, although they do plan to update their bottling line to accommodate future bottlings.
75% corn, 13% rye, and 12% malted barley is the historic Beam Family mash bill used for this whiskey and the yeast is from Beam’s grandfather, Minor Case Beam’s, dona jug.
Nose: stone fruit, caramel, and clove
Palate: stewed fruits, baking spices, earthy black strap molasses, and vanilla flower with good viscosity
Finish: warm medium finish with a pop of cinnamon at the end
